Sweet Potato Soup / Marak Batata
As the freezing weather approaches in New York, it’s time for some winter soup action. Here in North America, we think of a hot bowl of chili or chicken soup as a winter cure, but in Asia, the sweet potato is a winter delicacy. In Israel, nothing says “winter” like a bowl of Marak Batata (sweet potato soup). This sweet and savory dish shows up on nearly every menu during Israel’s cold season, and is truly warming for the soul.
Here is my recipe of Sweet Potato Soup! Ingredients:
2 tbsp butter
1 onion, peeled and diced
1 carrot, peled and diced
1 leek, white part only, diced
5 medium sweet potatoes, peeled and cut into 1″ cubes
3 cups water
3 cups vegetable/chicken stock
salt and pepper to taste
In a large pot, dice onion and leek and saute in butter.
Dice sweet potato and carrot and add to pot, stirring, with salt and pepper.
Add stock and water to cover vegetables. Cover for 30 minutes, until vegetables are soft.
In batches, ladle the soup into a blender and puree.
