Mom’s Easy Summer Cake

I use the term “Summer Cake” very loosely, as my family eats this cake year round. But it really does scream summer. You can swap in any fruits you like, customizing it to your palette. How many cakes can do that, hmmm? Yeah, that’s what I thought.

If you bake this cake, I promise, whoever you serve it to will ask you for the recipe. It’s extremely moist, sweet, tart, and heavenly. We baked this cake for my sister’s bridal shower, and it was the biggest desert hit! The ladies went gaga.

Easy Summer Cake (Plums, apricots, peaches, apples, etc).
[This version is made with plums]

2 sticks of margarine (1 cup)
1 1/2 cup sugar
2 tsp vanilla extract
4 eggs
2 cups of flour
2 tsp baking powder
1/2 cup of cinnamon and sugar
sliced fruit of choice

In a mixing bowl, add margarine

Add sugar

Whip in mixer

Add 4 eggs and the baking powder.

Fold flour into mixture with a spoon.

Whip the mixture again, and a creamy batter will result. Meanwhile, grease a baking pan.

Pour mixture in greased baking pan. We sliced up about 5 plums and threw em in the batter.

Cinnamon and Sugar is combined

Sprinkle cinna sugar onto the cake

Here it is, about to go into the oven for some baking at 350 for 1 hour.
