French Toast stuffed with Brie and Strawberries
Breakfast please. I have nothing much to say about this except it is amazing and decadent for brunch. Who wouldn’t want french toast stuffed with cheese and fruit (especially if you are hungover)?
Challah bread (can be a few days old)
4 eggs
1/4 c milk
1 tsp vanilla
1 tsp cinnamon
2 tbsp butter
sliced strawberries
sliced brie

Crack the eggs into a bowl and add the milk, vanilla, and cinnamon. Whisk together.




Slice the challah bread and coat each slice in the egg batter.


In a hot pan, add the butter until it melts. Place eggy bread into the pan and fry.

Slice up some berries and brie.

When the french toast is done, cut each piece in half on the bias, resulting in two triangular slices. Place a slice of brie and berries on and sandwich the other half over it. Place back in pan and give it a quick fry on both sides to melt the cheese.


Add more berries, and coat with cinnamon and sugar. You can always add syrup or creme freche but plain fruit does the treat for me…

I might try Ricotta instead of Brie with this recipe – will let you know how it turns out!

Ever thought of cutting the Challah a bit thicker and then slitting it down the middle and stuffing it?
