Moroccan Fish Stew
I love fish stew! It is such a fresh, light version of a meat stew and just as filling. Also, in these summer months, it is a quick and easy dish so that you don’t have to spend too much time indoors.
This dish is Moroccan inspired, and I ate it last Friday night at my best friends house.
You will need:
1 Head of garlic, chopped
1 medium white onion, sliced
1 can of chopped tomatoes
1 jar of roasted red peppers, sliced
1 jar of kalamata olives
half a bunch of parsley, chopped
salt and pepper to taste
4 tsp sugar
cayenne
3 fillets of your favorite fish (I used flounder)
Sautee garlic and onion in a pot

Add in the can of crushed tomatoes.

Slice the roasted red peppers, add to pot.

Add salt, pepper, cayenne, and sugar.

Throw in the chopped parsley

Throw in the olives

Clean, slice, and salt the flounder.



Add it to the stew, and voila!

Final product, yum, with a simple salad of arugula, lemon juice, and parmesan.
