Huevos Rancheros
I love to order this Mexican breakfast classic over a hungover brunch [bloody mary included]. It is so easy and consists of ingredients that you should always have in the pantry. So, why not make it at home for a fraction of the restaurant price, in the comfort of your pjs on a Sunday morning?
I ain’t no Mexi or nothing, but I could become an honorary south of the border citizen based on this dish’s awesomeness.
You will need:
Eggs
Tortillas
Shredded cheese
Beans
Butter
Salt n Pepa

Melt butter into a hot saute pan.

Place tortilla in pan over melted butter and add shredded cheese. It will begin to melt almost immediately.

Crack egg over tortilla and cheese (You may crack two eggs if you are hungry).

The egg will cook sunny side up, but since the tortilla is the barrier between the egg and the pan, flip it over so that it cooks evenly. Sort of like an over easy egg.

Add beans and chopped tomatoes or sauce and you have huevos rancheros! So easy, right?
