Sunday Night Feast
On Sundays, I like to cook for my sister. Here is what we dined on.
The Menu:
Peppers and zucchinis stuffed with meat & rice
Sauteed Brussel Sprouts
Arugula, green beans, and tomato salad with lemon dressing
Ingredients: 1 lb beef, 6 cloves garlic, one white onion, tsp tumeric, tsp cumin, tsp hot paprika, salt and pepper to taste, 1 cup white rice, 5 peppers, 3 zucchinis (halved)
For sauce: 16 oz tomato sauce, 1/2 cup of sliced cherry tomatoes, flesh of the zucchini (what was scooped out), handful of chopped flat leaf parsley
chop chop, garlic and onion
oh hey, mr. beef
while 1 cup rice is being cooked (usually 1 c rice: 1 3/4 c water), season les boeuf
the garlic and onions are sauteed in olive oil, of course, and the seasoned beef is added.
i will gut you, peppers, and your little dog too
once the beef is browned, the rice is added. yay
the fun part is stuffing em
while the stuffed veggies are sitting on my counter, waiting to be cooked, i made a sauce of the remaining beef and rice mixture (that didn’t make it into the inside of a veggie, sorry). I added the tomato sauce, some parsley, more salt and pepper, and some diced cherry tomatoes.
When the sauce is hot, I added the veggies and covered the pot, kept on a low flame for 30 min.
Meanwhile, I chopped up more garlic and sliced up about 1 lb of brussel sprouts
Heat up olive oil in pan, add garlic, sprouts, salt and pepper. make sure to coat the brussel sprouts well with the olive oil, tossing and tossing constantly

Note from Chef Monsta’s sister: This dish was amazing and pretty. Probably the top 2 best meals ever from CM (the other being her Penne a la Vodka). I had the leftovers for lunch at work for two days.
