PENNE A LA SKY VODKA
I made this penne vodka with sweet cherry tomatoes and basil last week. Cherry tomatoes must be in season since I have been buying them all month at 3 containers for $5! (That is a deal here in Manhattan). I made the recipe as I went along…
1 can of hunts tomato sauce
A splash of Sky vodka
1/4 cup cream
A lot of grated Parmesan
Half a box of penne
3 cloves crushed garlic
Half a container of cherry tomatoes, sliced
Basil for garnish
Salt and pepper, to taste (I put a LOT of pepper)
Saute crushed garlic in olive oil. Add cherry tomatoes. Once the tomatoes have softened, add the can of tomato sauce to the mixture. Stir the cream and vodka. Simmer over low heat until the sauce is heated through. Stir in the Parmesan cheese until melted and well blended.
Meanwhile, cook the pasta in a pot of boiling salted water until al dente, tender but still firm to the bite, stirring occasionally, about 8 minutes. Drain the pasta and transfer it to the pan with the sauce, and toss to coat.

Did you take the leftover tomato salad and use it in the pasta? cause that would be really recession-friendly!
