Hooray for Purim
Purim is tomorrow! Purim is a Jewish holiday that commemorates the deliverance of the Jewish people of the ancient Persian Empire from Haman’s plot to annihilate them! Despite the ominous plot of the story of Purim, it is actually our most festive and joyous holiday, with an emphasis on children, sweet treats, dressing in costume, drinking, and parties!
The most famous food associated with Purim is the hamantaschen (translation: ears of Haman), which is a triangular pastry filled with fruit jelly, poppy seed, or chocolate.
Here is a great recipe below. Feel free to improvise (with or without the honey)
Basic Hamantaschen Recipe
6-7 cups flour
5 t. baking powder
1/2 t. salt
2/3 c. butter, shortening, or margarine
1 c. sugar
1/2 c. honey
4 eggs
2 T. lemon juice
ANY FILLING YOU WANT!! My fave is raspberry jam.
Mix all ingredients except flour with beater or in stand mixer. Start adding flour gradually, until dough sticks together. Roll out and cut circles (with the back of a glass or circular cookie cutter). Spoon a small amount filling in center and pinch into triangle. Bake 15 minutes at 350 degrees.
Yields approx 125 Hamantaschen.
